Vegetable Jamalaya

A vegatable based Jamalaya, to which seafood or chicken can easily be added to suit your tastes

Ingredients

  • 1 - Large Onion, chopped
  • 1 - Celery stick, sliced
  • ½ - Green Pepper; deseeded and chopped
  • ½ - Red Pepper; deseeded and chopped
  • 1 tsp - Fresh Ginger, grated
  • 2 - Garlic cloves, crushed
  • 1 tsp - Cajun Seasoning
  • ½ tsp - Cayenne Pepper
  • 284 ml / ½ pint - Vegetable Stock
  • 1 - can of chopped Tomatoes
  • 175 gms pack - Quorn Pieces
  • 113 gms / 4oz - Long Grain Rice
  • 1 x 198 gms - can of Kidney Beans, drained
  • 1 tbsp - Lemon Juice
  • Salt & Pepper
  • 5 - Spring Onions, finely sliced to garnish

Method

  1. Add oil to a frying pan and cook the onion, celery and peppers for 5 minutes.
  2. Add the ginger and garlic and cook for a further minute. Stir in the spices and a third of the stock and cook for 2-3 minutes.
  3. Add the tomatoes, Quorn Pieces and another third of the stock, bring to the boil and add the rice. Cover and simmer gently for 10 minutes.
  4. Stir in the kidney beans and bring back to the boil. Add the remaining stock and simmer for 10 minutes until the rice is cooked and most of the liquid has been absorded.
  5. Stir in the lemon juice and season to taste. Garnish with the spring onions before serving.
