In an attempt to lose weight in early 2011, a friend and I joined Slimming World, here I've listed recipes that I have adapted or collected through friends, that will help support you in Food Optimising and enable you to enjoy healthy food that still tastes great.

To date, I have lost over 4 stone following the Slimming World Extra Easy plan. It hasn't been an easy journey, but it has been very rewarding.

Beef Lasagne

Slimming World extra easy syns: 5.0 per portion
Serves: 6

Cooking time: 50 minutes

Classic italian family dinner dish

Ingredients

  • 500 gms - Extra Lean Minced Beef
  • 3 - Cloves of Garlic, crushed
  • 1 - Carrot, finely diced
  • 1 - Courgette, finely chopped
  • 400 gms - Tomato Passata
  • 2 tsp - Dried Mixed Herbs
  • 1 - Beef Stock cube
  • 8-10 - Lasagne Sheets
  • 30 gms - Butter
  • 3 tbsp - Plain flour
  • ½ pt - Milk
  • Salt & Pepper
  • 28 gms - Parmesan Cheese, grated

Method

  1. Dry fry the beef in a large non stick pan until brown, making sure there are no pink bits. Once cooked, carefully drain off any liquid.
  2. Add onion, garlic, carrot and courgette to a food processor, and blitz until very finely chopped. Add the blitzed veg to the pan of meat, together with the herbs and tomaotes, to the pan and stir, then add stock cube and simmer for 30 minutes.
  3. Preheat oven to 190°C. Meanwhile make sauce. Melt butter, add flour and make a rue, Slow mix in milk and continue to stir until all add and sauce begins to thicken, season.
  4. If using dried pasta, their are 2 options, Use dry, but allow 20 mins for lasagne to stand before cooking. Alternatively, in a deep frying pan add boiling water and poach sheets, 1 or 2 at a time, so they don't stick together, for 5-10 minutes, until soft, then add to a bowl of cool water while you do the next batch and keep them until you are ready to layer up.
  5. When beef sauce is cooked, add a third to the oven dish, place a layer of pasta, then repeat with addition beef sauce and pasta layer. Pour over white sauce and spread evenly, sprinkle over parmesan and bake for 35-40 minutes.
  6. Ideally let the cooked lasagne stand in a warm place for 10-15 minutes before serving.
