Tomato & Bacon Pasta sauce

Light italian dish, can also be served cold as Pasta Salad

Ingredients

  • 4 slices - Smoked Back Bacon, all fat removed and chopped
  • 1 - Small Onion, chopped
  • 2 - cloves of Garlic, crushed
  • 200 ml - Tomato Passata
  • 2 tsp - Balsamic Vinegar
  • 1 - Vegetable Stock Cube
  • 1 tsp - Dried Mixed Herbs
  • Ground Black Pepper
  • 4 -5 - Fresh Basil Leaves
  • 1 tsp - Sweet Paprika
  • ½ - Can of Butter Beans, drained (Optional)
  • 1 small handful - Olives (Optional)

Method

  1. Heat a non-stick pan and add the chopped bacon and a tsp of water and fry until cooked, stirring frequently until slightly brown.
  2. Add sliced onion and garlic and cook until soft. Add more water if it gets too dry.
  3. Add passata, balsamic vinegar, stock cube, herbs, pepper and cook for about 5 mins until reduced, then stir in chopped basil.
  4. Leave to stand for 3-4 minutes.

Optional - Add olives or butter beans at point 3.
