Fantastic quick chilli, ideal for dinner, or as a filling for Jacket Potatoes or stuffed peppers
- 500 gms - Extra Lean Minced Beef
- 1 - Onion, finely chopped
- 1 - Celery Sticks, finely chopped
- 1 - Carrot, finely diced
- ½ - Courgettes, finely diced
- 1 - Garlic clove, crushed
- 2 tbsp - Dried Mixed Herbs
- 1 tsp - Chilli Powder
- 1 tsp - Ground Cumin
- 1 tsp - Paprika
- 1 tbsp - Tomato Puree
- 1 - Bay Leaf
- 1 x 400 gms - Tin of Kidney Beans / Mixed Beans
- 1 - Beef Oxo Cubes
- 1 x 400 gms - Tin of Chopped Tomatoes
- Salt & Pepper
- Soften onion, courgette, celery and carrot in pan for a couple of minutes on low heat.
- Add crushed garlic, heat for few seconds
- Add mince and cook until brown ( break up meat as it cooks)
- Add tomatoes, kidney beans and all of the herbs, puree and spices Cover pan and simmer for 30 minutes.
- Taste and add additional spices to suit your taste. Ready to eat.
- Can be frozen on the day.
