Tasty Chilli con Carne

Fantastic quick chilli, ideal for dinner, or as a filling for Jacket Potatoes or stuffed peppers

Ingredients

  • 500 gms - Extra Lean Minced Beef
  • 1 - Onion, finely chopped
  • 1 - Celery Sticks, finely chopped
  • 1 - Carrot, finely diced
  • ½ - Courgettes, finely diced
  • 1 - Garlic clove, crushed
  • 2 tbsp - Dried Mixed Herbs
  • 1 tsp - Chilli Powder
  • 1 tsp - Ground Cumin
  • 1 tsp - Paprika
  • 1 tbsp - Tomato Puree
  • 1 - Bay Leaf
  • 1 x 400 gms - Tin of Kidney Beans / Mixed Beans
  • 1 - Beef Oxo Cubes
  • 1 x 400 gms - Tin of Chopped Tomatoes
  • Salt & Pepper

Method

  1. Soften onion, courgette, celery and carrot in pan for a couple of minutes on low heat.
  2. Add crushed garlic, heat for few seconds
  3. Add mince and cook until brown ( break up meat as it cooks)
  4. Add tomatoes, kidney beans and all of the herbs, puree and spices Cover pan and simmer for 30 minutes.
  5. Taste and add additional spices to suit your taste. Ready to eat.
  6. Can be frozen on the day.
