Syn-free Lemon Curd

A great alternative to high sugar, high syn spread. Great in cakes and desserts

Ingredients

  • 1 - lemon
  • 3 tbsp - Sweetner
  • 2 - Eggs
  • 2 oz - Very low fat Fromage Frais or Quark

Method

  1. Place lemon rind and sweetener in a glass bowl
  2. In another bowl whisk the lemon juice and eggs together and then pour it over the sweetener.
  3. Place the bowl over a simmering pan of water stirring frequently until thickened.
  4. Add the fromage frais or Quark, whisking until smooth and refridgerate.
