A hearty winter warmer, and ideal for using up those leftovers
- 1 - Onion, finely chopped
- 1 - Celery Stick, finely chopped
- 500 gms - Leftover Veg (Roast Carrots, parsnips, potatoes, brocolli, cauliflower), finely chopped
- 100 gms - Roast Chicken (Meat from wings or legs is best)
- 15 gms - Dried Sage and onion stuffing mix
- 1 tsp - Tomato puree
- Salt & Pepper
- Fry Light
- 1 pint - Chicken Stock
- Soften onion and celery in a hot pan with Frylight.
- Add all the precooked veg, warm through, then add the stock and simmer for 5 minutes.
- Add stuffing mix, tomato puree and diced chicken, stir through and leave to simmer for 10 minutes on a low heat. Blitz and if required add a little more stock to make up to the consistency you like.
- Season to taste and serve.
