Sunday Lunch Soup

A hearty winter warmer, and ideal for using up those leftovers

Ingredients

  • 1 - Onion, finely chopped
  • 1 - Celery Stick, finely chopped
  • 500 gms - Leftover Veg (Roast Carrots, parsnips, potatoes, brocolli, cauliflower), finely chopped
  • 100 gms - Roast Chicken (Meat from wings or legs is best)
  • 15 gms - Dried Sage and onion stuffing mix
  • 1 tsp - Tomato puree
  • Salt & Pepper
  • Fry Light
  • 1 pint - Chicken Stock

Method

  1. Soften onion and celery in a hot pan with Frylight.
  2. Add all the precooked veg, warm through, then add the stock and simmer for 5 minutes.
  3. Add stuffing mix, tomato puree and diced chicken, stir through and leave to simmer for 10 minutes on a low heat. Blitz and if required add a little more stock to make up to the consistency you like.
  4. Season to taste and serve.
