Sunblushed Tomatoes

A tasty salad accompanyment, or nibble. Add these tomatoes to quiches, salads and couscous, for a taste of sunshine.

Ingredients

  • 20 - Midi Vine Tomatoes
  • Sea Salt
  • 4 - cloves of Garlic, crushed
  • 2 tsp - Oregano
  • Fry Light

Method

  1. Preheat your oven to 110°C/225°F. Cut the tomatoes in half and scoop out some of the seeds. Sprinkle with sea salt and place cut side down on Kitchen paper.
  2. Line a baking tray with foil. Put tomatoes in a bowl with the chopped garlic and oregano. Spray with Fry Light, stir to coat and then place the tomatoes cut side up on the lined baking tray.
  3. Cook in the oven for 2 hours and then leave to cool.
  4. Server, or transfer to a steralised jar and chill in the fridge for upto 3 days.
