A tasty salad accompanyment, or nibble. Add these tomatoes to quiches, salads and couscous, for a taste of sunshine.
- 20 - Midi Vine Tomatoes
- Sea Salt
- 4 - cloves of Garlic, crushed
- 2 tsp - Oregano
- Fry Light
- Preheat your oven to 110°C/225°F. Cut the tomatoes in half and scoop out some of the seeds. Sprinkle with sea salt and place cut side down on Kitchen paper.
- Line a baking tray with foil. Put tomatoes in a bowl with the chopped garlic and oregano. Spray with Fry Light, stir to coat and then place the tomatoes cut side up on the lined baking tray.
- Cook in the oven for 2 hours and then leave to cool.
- Server, or transfer to a steralised jar and chill in the fridge for upto 3 days.
