Spicy Tomato Chutney

A healthy treat ideal for BBQ's. Try on Chicken, Burgers, Steak

Ingredients

  • 1 - Can of chopped Tomatoes
  • 1 - Onion, finely chopped
  • 1-2 tsp - Red Wine Vinegar
  • 2 tsp - Smoked Paprika
  • Salt & Pepper
  • 1 tsp - Worchesterhire Sauce
  • 1 tbsp - Sweetener

Method

  1. Soften onion, then add tomatoes, paprika, simmer for 2 minutes then add 1 tsp red wine vinegar, the worc sauce and 1tsp of Sweetner, a pinch of salt and pepper, and simmer for 5 minutes, to reduce a little.
  2. Taste, this is where you may need to add more sweetner or more vinegar - this depends on the sweetness of the tomatoes.
  3. Allow to cool a little before putting into a sterilised jar.
  4. Keep refrigerated and use within 2 weeks ideally.

Tip
It also works well adding: a) finely chopped red or yellow peppers. b) a handful of chopped basil and a clove of crushed garlic instead of the paprika. Enjoy!
