Singapore Noodles

Super fast chinese style treat. Add chicken or prawns to make it extra special

Ingredients

  • 3 sheets - Egg Noodles
  • 1 - Onion, finely sliced
  • 2 sprays - Fry Light
  • 1 tsp - Fresh/Lazy Ginger
  • ½ tsp - Chilli Flakes
  • 1 tsp - * Garam Massala
  • 1 tsp - * Ground Coriander
  • 1 tsp - * Ground Cumin
  • 1 tsp - * Turmeric
  • 4 tbsp - Frozen Peas
  • 1 - Carrot, cut into matchsticks
  • 2 - Eggs
  • 2 tbsp - Soy Sauce
  • 2 tsp - Toasted Sesame Oil
  • 1 small handful - Fresh Coriander, chopped
  • 1 tbsp - * - Replace with Medium Curry Powder

Method

  1. Heat a pan of water to boiling, drop in the noodles, remove from heat and let soak for 5 mins.
  2. Heat a large frying pan or wok, spray with frylight and add Onions, ginger, peas and garlic, cook until soft, about 3-4 mins)
  3. Crack in one egg, and stir around, breaking it up as it cooks.
  4. Add Soy sauce, herbs and spices, and the second egg, and again stir around breaking up the egg. Drain and then add the cooked noodles.
  5. Drizzle over Sesame oil, and add fresh corinader, stir and serve.

Tip
If you want to add cooked chicken or prawns, or mange tout, cooked brocolli or other veg, do so in step 3.
