Super fast chinese style treat. Add chicken or prawns to make it extra special
- 3 sheets - Egg Noodles
- 1 - Onion, finely sliced
- 2 sprays - Fry Light
- 1 tsp - Fresh/Lazy Ginger
- ½ tsp - Chilli Flakes
- 1 tsp - * Garam Massala
- 1 tsp - * Ground Coriander
- 1 tsp - * Ground Cumin
- 1 tsp - * Turmeric
- 4 tbsp - Frozen Peas
- 1 - Carrot, cut into matchsticks
- 2 - Eggs
- 2 tbsp - Soy Sauce
- 2 tsp - Toasted Sesame Oil
- 1 small handful - Fresh Coriander, chopped
- 1 tbsp - * - Replace with Medium Curry Powder
- Heat a pan of water to boiling, drop in the noodles, remove from heat and let soak for 5 mins.
- Heat a large frying pan or wok, spray with frylight and add Onions, ginger, peas and garlic, cook until soft, about 3-4 mins)
- Crack in one egg, and stir around, breaking it up as it cooks.
- Add Soy sauce, herbs and spices, and the second egg, and again stir around breaking up the egg. Drain and then add the cooked noodles.
- Drizzle over Sesame oil, and add fresh corinader, stir and serve.
