Sausage & Lentil Casserole

An inexpensive meal for all the family, ideal for using up leftover BBQ sausages.

Ingredients

  • 1 pack - Tesco Low Fat Cumberland Sausages, cooked & sliced
  • 1 - Large Onion, sliced
  • 1 x 400 gms - Can of chopped Tomatoes
  • 2 tsp - Ground Coriander
  • 2 tsp - Ground Cumin
  • 1 tsp - Chilli Powder
  • 1 x 400 gms - Can of Kidney Beans, drained
  • 1 - Large Carrot, grated
  • 1 tsp - Dried Mixed Herbs
  • 2 - Beef Oxo Cubes
  • 1 tbsp - Worchestershire Sauce
  • ½ pint - Water

Method

  1. In a casserole dish, add all the ingredients, stir and cover.
  2. Microwave on full power for 10 minutes, stir again, if too thick add a little more water and zap for another 4 minutes. If you prefer to oven cook this, do so at 180°C for 30 minutes.

Serve with Mashed Potatoes and Vegetables, or in a Jacket Potato.
