A light vegetarian dish or side dish, inspired by Jamie Oliver
- 200 gms - Green Lentils
- 2 - Carrots, diced
- 2 - Celery Sticks, finely chopped
- 1 - Onion, finely chopped
- 1 pint (approx) - Vegetable Stock
- 1 - Bouquet Garni
- 1 - Potato
- 1 Handful - Spinach
- 3 tbsp - Red Wine Vinegar
- Salt & Pepper
- Fry all the chopped veg, sweat off 10 minutes
- Add the lentils
- Make up your bouquet garni (fill celery stick with thyme, parsley and bay leaf, wrap a leaf of leek around and secure. Alternatively simply add dried thyme and chopped parsley to the pan, along with 2 bay leaves). Add to the pan of veg and lentils.
- Throw in the potato, add stock to cover, cook for 30 minutes.
- After 30 mins, crush the potato and stir back in, put back on heat, add spinach, stir through, season and serve.
- Garnish with 1 tbsp of creme fraiche and serve.
