A light but versatile dinner dish. It's super simple, and low cost. Add a little chilli to spice up the potatoes a little or replace the bacon with leftover roast chicken or pork.
- 1lb / 454 gms - Baby new potatoes
- 1 - Onion, finely chopped
- 2 - cloves of Garlic, crushed
- 1 x 400 gms - can of chopped Tomatoes
- 1 tsp - Dried Mixed Herbs
- 1 - Vegetable Stock Cube
- Salt & Pepper
- 12 oz / 340 gms - Cooked bacon, all fat removed
- 25 gms - Parmasan, grated
- Pre heat oven to 180°C. Cook potatoes in boiling water for 10 mins. Drain and put into an oven proof dish.
- Soften an onion in a pan with fry light, add crushed garlic, oxo cube, herbs and the tomatoes, cook for 5-8 mins.
- Season and pour over the potatoes.
- Toss gently and then stir in the bacon.
- Sprinkle with grated parmesan.
- Bake for 25-30 minutes.
