Potato and Bacon Bake

A light but versatile dinner dish. It's super simple, and low cost. Add a little chilli to spice up the potatoes a little or replace the bacon with leftover roast chicken or pork.

Ingredients

  • 1lb / 454 gms - Baby new potatoes
  • 1 - Onion, finely chopped
  • 2 - cloves of Garlic, crushed
  • 1 x 400 gms - can of chopped Tomatoes
  • 1 tsp - Dried Mixed Herbs
  • 1 - Vegetable Stock Cube
  • Salt & Pepper
  • 12 oz / 340 gms - Cooked bacon, all fat removed
  • 25 gms - Parmasan, grated

Method

  1. Pre heat oven to 180°C. Cook potatoes in boiling water for 10 mins. Drain and put into an oven proof dish.
  2. Soften an onion in a pan with fry light, add crushed garlic, oxo cube, herbs and the tomatoes, cook for 5-8 mins.
  3. Season and pour over the potatoes.
  4. Toss gently and then stir in the bacon.
  5. Sprinkle with grated parmesan.
  6. Bake for 25-30 minutes.

Tip
You can replace the bacon, with chicken or turkey. Alternatively courgettes work well for a vegetarian option.
