Pepper Pots

A little sauce filling based on a peppercorn steak sauce

Ingredients

  • 1 per person - Jacket Potato
  • 1 - Onion, finely chopped
  • 1 - Green Pepper; deseeded and finely chopped
  • Fry Light
  • 2 tbsp - Creme Fraiche
  • 50 ml - Skimmed Milk
  • 2 tbsp - Ground Black Pepper
  • ½ tsp - Chilli Powder
  • a pinch - Dried Mixed Herbs
  • Salt
  • 2-3 slices - Sliced beef or steak

Method

  1. Place a fry pan on a medium heat and spray with a little FryLight.
  2. Add onions and peppers and fry gently until softened.
  3. Add Creme Fraiche, 1 tbsp of ground pepper, the mixed herbs, chilli powder and a pinch of salt and mix in. Turn the heat to low, so as not to burn the creme fraiche, then add a little milk at a time to make a sauce consistency.
  4. Add the beef and stir in and warm through, check the seasoning, you may want to add the rest of the black pepper at this point, a little at a time.
  5. Place you hot potato on the plate, cut open and spoon in the pepper sauce and beef mix. Serve alone or with a mixed salad.
