Low Syn Vanilla Ice Cream

Delicious treat with reduced naughtiness, but still creamy, Change vanilla Mullerlight for another flavour and add some fresh fruits just prior to freezing to add a twist.

Ingredients

  • 2 - Vanilla Pods
  • 8 tbsp - Sweetener
  • 397 gms - Ready to sue, low fat Custard
  • 2 x 190 gms - Vanilla Mullerlight Yogurt
  • 1 tsp - Vanilla Extract
  • 2 - Egg Whites

Method

  1. Split Vanilla pods in half and scrape out the seeds. Add these to the bowl along with the sweetener, custard, muller and vanilla extract.
  2. Mix together well. In a separate bowl whisk the egg whites until frothy.
  3. Add the whites to the custard mix and stir well.
  4. Put in a shallow oven dish, cover and freeze for 2-3 hours. Remove from the freezer, put misture in a food processor and blend until smooth and return to thedish, cover and return to the freezer for a further 1-2 hours, or starting to set around the edges.
  5. Remove the ice cream from the freezer and use a fork to beat the mixture, breaking up the ice crystals. Freezer for a further 3-4 hours, beating every 30-40 minutes until mixture is firm enough to scoop.
  6. Remove from the freezer about 15 minute prior to serving.
  7. Alternatively to steps 4-6 use an ice cream maker, following the makers instructions.
