A simple, 'throw together' dish for all the family
- 8 - Chicken Thighs or Breast
- 1 - Butternut Squash, peeled, deseeded and chopped
- 1 lb - Potatoes
- 1 lb - Carrots
- 2 - Onions
- 2 - Courgettes
- Fry Light
- Salt & Pepper
- 2 tbsp - Balsamic Vinegar
- 3 - Garlic clove, crushed
- 1 - Lemon, Zest and Juice
- 1 handful - Parsley, chopped
- Preheat oven to 220°C. Place Squash, potatoes, carrots, courgettes and onions in a large roasting tray. Spray all with Fry Light and season well. Toss together to combine and drizzle over the balsamic vinegar.
- Season chicken and nestle between the veg and roast for 40 minutes.
- Mix together the Garlic, Lemon zest, juice and parsley. Remove chicken from the oven drizzle lemon mix over and toss, return to the oven for a further 10 minutes.
- Serve with broccoli or other green veg.
