Lemon & Garlic Chicken Bake

A simple, 'throw together' dish for all the family

Ingredients

  • 8 - Chicken Thighs or Breast
  • 1 - Butternut Squash, peeled, deseeded and chopped
  • 1 lb - Potatoes
  • 1 lb - Carrots
  • 2 - Onions
  • 2 - Courgettes
  • Fry Light
  • Salt & Pepper
  • 2 tbsp - Balsamic Vinegar
  • 3 - Garlic clove, crushed
  • 1 - Lemon, Zest and Juice
  • 1 handful - Parsley, chopped

Method

  1. Preheat oven to 220°C. Place Squash, potatoes, carrots, courgettes and onions in a large roasting tray. Spray all with Fry Light and season well. Toss together to combine and drizzle over the balsamic vinegar.
  2. Season chicken and nestle between the veg and roast for 40 minutes.
  3. Mix together the Garlic, Lemon zest, juice and parsley. Remove chicken from the oven drizzle lemon mix over and toss, return to the oven for a further 10 minutes.
  4. Serve with broccoli or other green veg.
