A delicious thick soup to tempt the children into having their 5 a day.
- 3 - Large Carrots, diced
- 1 - Parsnip, diced
- ½ - Swede, diced
- 2 - Large Mushrooms, sliced
- 1 - Onion, finely chopped
- 3 - Garlic cloves, crushed
- 1 - Vegetable or Chicken Stock cube
- 150 ml (from your 'a - Skimmed Milk
- a pinch - Cayenne Pepper
- Boil all veg together in water til cooked.
- Then place all veg in a food processor with a little of the stock (as much as you like, I like it quite thick so don't put much in)
- Crumble a stock cube in while it's blitzing.
- Then place cayenne pepper in (enough for your own liking) then the milk. Keep blitzing for a couple of mins then it's done :)
