Helen's Thick Veg Soup

A delicious thick soup to tempt the children into having their 5 a day.

Ingredients

  • 3 - Large Carrots, diced
  • 1 - Parsnip, diced
  • ½ - Swede, diced
  • 2 - Large Mushrooms, sliced
  • 1 - Onion, finely chopped
  • 3 - Garlic cloves, crushed
  • 1 - Vegetable or Chicken Stock cube
  • 150 ml (from your 'a - Skimmed Milk
  • a pinch - Cayenne Pepper

Method

  1. Boil all veg together in water til cooked.
  2. Then place all veg in a food processor with a little of the stock (as much as you like, I like it quite thick so don't put much in)
  3. Crumble a stock cube in while it's blitzing.
  4. Then place cayenne pepper in (enough for your own liking) then the milk. Keep blitzing for a couple of mins then it's done :)
