Daupinoise Potatoes

A tasty way to enjoy potatoes, without too much work. The creamy but low fat garlic and rosemary sauce can compliment so many dishes, from roast lamb to chicken or on it's own. Maybe add some bacon bits or sliced carrots. Go wild!

Ingredients

  • 1 lb - Waxy Potatoes (Charlotte), Peeled and sliced
  • 2 - Sweet Potatoes
  • 2 - Onions, sliced
  • 142 gms / 5 oz - Quark
  • 312 ml / 11 floz - Vegetable Stock
  • a pinch - Ground cinnamon
  • a pinch - Ground Nutmeg
  • 4 - Garlic clove, crushed
  • Fry Light
  • Salt & Pepper
  • 1 small handful - Fresh Parsley, chopped

Method

  1. Preheat your oven to 200°C/400°F. Spray a medium size oven proof dish with Fry Light.
  2. Arrange a layer of the potatoes and Sweet potatoes in the bottom of the dish, then top with the onions. Finish with another layer with the remaining potatoes.
  3. In a jug, mix together the Quark, stock, cinnamon, nutmeg, garlic and pepper until smooth, then pour over the potatoes.
  4. Bake for 50-60 minutes until the potatoes are tender and the top golden brown. Allow to rest for 5 minutes before serving.
