A delightful twist on a traditional full fat banana cream pie, and so yummy.
- 6 - Eggs
- 10 tbsp - Artificial Sweetener
- 56 gms - Wholemeal SR Flour
- 3 - Chocolate Options (satchets)*
- 66 gms - Or - Chocolate Options (loose powder)*
- 1 tsp - Baking Powder
- 1 - Sachet Low fat instant custard
- 2 - Bananas (1 mashed)
- 4 tbsp - Low fat Fromage Frais
- 1 tsp - Vanilla Extract
- 5 tbsp - Creme Fraiche
- 2 tbsp - Artificial Sweetener
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Whisk the eggs and 10 tbsp sweetener until thick and creamy, then fold in the flour, Options and baking powder with a metal spoon.
- Spray a silicone flan case and spoon the mix in. Cook for 15-20 mins.
- Turn the sponge out onto a sheet of greaseproof paper, then cover with a clean tea towel to cool.
- Mash up 1 banana and keep the other for topping.
- Make up the instant custard with only 1/2 the hot water required, then stir in the mashed banana. Allow to cool for 5 minutes.
- Gently stir in the fromage frais and 1 tbsp of sweetener and vanilla extract.
- Carefully pour the banana mixture into the cooled flan case and refridgerate for 1-2 hours to allow it to set.
- When ready to serve, mix the remaining 2 tbsp sweetener with 5 tbsps of creme fraiche and spread over the flan, Decorate with the remaining sliced banana.
