Syn free curry that doesn't rely on Creme Fraiche or Yogurt.
- 800 gms - Chicken breast, cut into chunky cubes
- Salt & Pepper
- Fry Light
- 1 - Onion, finely chopped
- 2 tsp - Fresh Ginger, grated
- 2 - Garlic cloves, crushed
- 1 tbsp - Curry Powder (mild or medium)
- 1 tsp - Ground Cumin
- 1 tsp - Ground Coriander
- 1 tsp - Ground Cinnamon
- 1 tsp - Paprika
- ½ tsp - Cardamon, removed from pods and crushed
- ½ tsp - Ground Cloves
- ½ tsp - Ground Turmeric
- 1 - Can of chopped Tomatoes
- 284ml - Chicken stock
- 1 Handful - Fresh Coriander, finely chopped
- Place chicken on a plate, season and put to one side.
- Heat a pan and spray with FryLight, Add the onion and fry for 5-6 minutes or until soft and slightly brown.
- Stir in ginger, garlic, curry powder, and spices and fry for 2 minutes, until you can smell them toasting.
- Add the chicken pices and cook for 3-4 minutes until sealed.
- Add tin tomatoes and stock. Bring to the boil, cover tightly, reduce the heat to low and allow to simmer gently for 40 minutes, stirring occasionally.
- Remove from the heat, sprinkle in the fresh coriander, season to taste and serve
