Chicken & Tomato Curry

Syn free curry that doesn't rely on Creme Fraiche or Yogurt.

Ingredients

  • 800 gms - Chicken breast, cut into chunky cubes
  • Salt & Pepper
  • Fry Light
  • 1 - Onion, finely chopped
  • 2 tsp - Fresh Ginger, grated
  • 2 - Garlic cloves, crushed
  • 1 tbsp - Curry Powder (mild or medium)
  • 1 tsp - Ground Cumin
  • 1 tsp - Ground Coriander
  • 1 tsp - Ground Cinnamon
  • 1 tsp - Paprika
  • ½ tsp - Cardamon, removed from pods and crushed
  • ½ tsp - Ground Cloves
  • ½ tsp - Ground Turmeric
  • 1 - Can of chopped Tomatoes
  • 284ml - Chicken stock
  • 1 Handful - Fresh Coriander, finely chopped

Method

  1. Place chicken on a plate, season and put to one side.
  2. Heat a pan and spray with FryLight, Add the onion and fry for 5-6 minutes or until soft and slightly brown.
  3. Stir in ginger, garlic, curry powder, and spices and fry for 2 minutes, until you can smell them toasting.
  4. Add the chicken pices and cook for 3-4 minutes until sealed.
  5. Add tin tomatoes and stock. Bring to the boil, cover tightly, reduce the heat to low and allow to simmer gently for 40 minutes, stirring occasionally.
  6. Remove from the heat, sprinkle in the fresh coriander, season to taste and serve
