Chicken Noodle Soup

Ingredients

  • 1 - Onion, finely sliced
  • 1 - Garlic clove, crushed
  • ½ inch - Fresh Ginger, grated (lazy ginger)
  • 1 - Red Pepper, thinly sliced
  • 1 - Red Chilli, very finely chopped
  • 2 tsp - Chinese five spice
  • 1½ pints - Chicken Stock
  • 100 gms - Mange Tout or Peas
  • 1 - Carrot, cut into matchsticks
  • 2 sheets - Egg Noodles
  • 200 gms - Shredded cooked Chicken
  • 1 small handful - Fresh Coriander, finely chopped
  • 1 - Spring Onions, finely sliced to garnish
  • Salt & Pepper
  • to taste - Light Soy Sauce
  • 1 tsp - Toasted Sesame Oil

Method

  1. Spray a stock pan with fry light and soften the sliced onion, but don't colour.
  2. Add ginger, garlic and red pepper and soften, then add chilli and 5-spice. Warm through until you can smell the spices then add the hot chicken stock and simmer for 5 minutes.
  3. Add the mange tout/peas, carrot, egg noodles and chicken, simmer for another 5 minutes.
  4. Finally add the fresh coriander and spring onion, stir through, season to taste with soy sauce, pepper and toasted sesame oil and then serve.

Tip
You can also add brocolli, shredded cabbage or other finely chopped veg or bean sprouts.
