Light lunch or delicious starter,or a great all round comfort food? You decide.
- 1 - Onion, finely sliced
- 1 - Garlic clove, crushed
- ½ inch - Fresh Ginger, grated (lazy ginger)
- 1 - Red Pepper, thinly sliced
- 1 - Red Chilli, very finely chopped
- 2 tsp - Chinese five spice
- 1½ pints - Chicken Stock
- 100 gms - Mange Tout or Peas
- 1 - Carrot, cut into matchsticks
- 2 sheets - Egg Noodles
- 200 gms - Shredded cooked Chicken
- 1 small handful - Fresh Coriander, finely chopped
- 1 - Spring Onions, finely sliced to garnish
- Salt & Pepper
- to taste - Light Soy Sauce
- 1 tsp - Toasted Sesame Oil
- Spray a stock pan with fry light and soften the sliced onion, but don't colour.
- Add ginger, garlic and red pepper and soften, then add chilli and 5-spice. Warm through until you can smell the spices then add the hot chicken stock and simmer for 5 minutes.
- Add the mange tout/peas, carrot, egg noodles and chicken, simmer for another 5 minutes.
- Finally add the fresh coriander and spring onion, stir through, season to taste with soy sauce, pepper and toasted sesame oil and then serve.
