A delightful italian biscuit, great served with coffee or ice cream
- 1 - Egg
- 100 gms - Caster Sugar
- ½ tsp - Vanilla Extract
- 125 gms - Plain Flour
- ½ tsp - Baking Powder
- a pinch - Salt
- 40 gms - Natural Shelled Almonds
- 50 gms - Dark Chocolate Chips
- Whisk egg and sugar til pale and thick.
- Beat in vanilla and almond essence, then slowly fold in the flour salt and baking powder.
- When combined fold in almonds and chocolate, then form into a loaf like log about 25cm x 5 cm, slightly tapering at each end.
- Lay the log on baking parchment on baking sheet and cook for 25 mins til pale brown.
- Leave for 5 mins to harden slightly, then cut into diagonal slants about 1cm thick to give finger like slices.
- Put these back onto parchment and cook again about 10 min til golden brown. Cool and store in an air tight box.
