Bean & Bacon Potato Pockets

A light option for lunch or dinner, great served with salad

Ingredients

  • 1 - Onion, finely chopped
  • 1 - Celery Stick, finely chopped
  • Fry Light
  • 4 slices - Bacon, all visible fat removed and finely chopped
  • 1 - clove of Garlic, crushed
  • 1 x 400 gms - Baked Beans in Tomato Sauce
  • 300 gms - Potatoes, peel and chopped
  • 1 tbsp - Creme Fraiche
  • Salt & Pepper

Method

  1. Soften onion and celery in pan with Fry Light for 10 mins.
  2. Add bacon, then fry for 3 mins, until beginning to brown. Add garlic, then cook for 30 secs. Pour in baked beans, stir through and simmer gently for 5 minutes until the sauce thickens. Then allow to cool.
  3. Meanwhile, make mash. Boil potatoes until tender, about 15 mins, then drain. Mash with creme fraiche and seasoning. Allow to cool.
  4. divide the mash into 8, form into a circles, add a spoonful of bean filling into the centre of half of the circles. Space a second circle on top and seal to form a burger shape. These can now be left in the fridge until required.
  5. Heat a large fry pan and spray with Fry Light. Fry each Potato pocket on each side until golden and heated through and serve.

Tip
You could add a little grated cheese to the mash or filling for a treat. Although remember to add the syns.
