A light option for lunch or dinner, great served with salad
- 1 - Onion, finely chopped
- 1 - Celery Stick, finely chopped
- Fry Light
- 4 slices - Bacon, all visible fat removed and finely chopped
- 1 - clove of Garlic, crushed
- 1 x 400 gms - Baked Beans in Tomato Sauce
- 300 gms - Potatoes, peel and chopped
- 1 tbsp - Creme Fraiche
- Salt & Pepper
- Soften onion and celery in pan with Fry Light for 10 mins.
- Add bacon, then fry for 3 mins, until beginning to brown. Add garlic, then cook for 30 secs. Pour in baked beans, stir through and simmer gently for 5 minutes until the sauce thickens. Then allow to cool.
- Meanwhile, make mash. Boil potatoes until tender, about 15 mins, then drain. Mash with creme fraiche and seasoning. Allow to cool.
- divide the mash into 8, form into a circles, add a spoonful of bean filling into the centre of half of the circles. Space a second circle on top and seal to form a burger shape. These can now be left in the fridge until required.
- Heat a large fry pan and spray with Fry Light. Fry each Potato pocket on each side until golden and heated through and serve.
