- 8 - Low Fat Digestive Biscuits (crushed)
- 57 gms / 2 oz - Low Fat Spread (Can't Believe it's not Butter Light)
- 1 Sachet - Sugar Free Lemon Jelly Crystals
- 1 tsp - Powdered Gelatin
- 400 gms - Very low fat Fromage Frais
- 198 gms / 7 oz - Quark
- 5 tbsp - Sweetener
- 2 - Bananas
- Cocoa Powder to dust
- Melt low fat spread in a small pan, add crushed biscuits and mix well. Transfer to a 8in/20cm loose bottom tin and press down firmly. Chill for 30 mins
- Place 1/4pt/142ml boiling water in a jug, add jelly and gelatine and stir until dissolved. Top up to 1pt/568ml with cold water and allow to cool.
- Place cooled jelly mix in a food processor with the fromage frais, quark and sweetener and blend until smooth.
- Pour over biscuit base, cover and chill overnight.
- When ready to eat, remove cheesecake from the tin, and place on a serving plate. Slice bananas and arrange on the top. Dust with cocoa powder.
