Apricot Loaf

A twist on Slimming World's Weetabix cake. Great replacement for high syn Malt loaf slices at 3 syns per 25 gms

Ingredients

  • 2 - Weetabix
  • 113 gms / 4oz - Semi dried Apricots
  • 142ml / 5 floz - Skimmed Milk
  • 142 ml / 5 floz - Water
  • 113 gms / 4oz - Self Raising Flour
  • ½ tsp - Ground Cinnamon
  • ½ tsp - Ground Nutmeg
  • 14 gms / ½oz - Artificial Sweetener
  • 1 - Egg, beaten
  • 1 tsp - Caster Sugar

Method

  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
  2. Put the Weetabix and Apricots in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
  3. Stir in the flour, spices, sweetener and beaten egg.
  4. Spoon the mixture into a 454g/1lb lined loaf tin and sprinkle over the sugar, so that a crust forms during baking.
  5. bake in the preheated oven for 1 hour, 15 minutes, until cooked.
  6. Cool on a wire rack before serving, then cut into 12 slices.
