A twist on Slimming World's Weetabix cake. Great replacement for high syn Malt loaf slices at 3 syns per 25 gms
- 2 - Weetabix
- 113 gms / 4oz - Semi dried Apricots
- 142ml / 5 floz - Skimmed Milk
- 142 ml / 5 floz - Water
- 113 gms / 4oz - Self Raising Flour
- ½ tsp - Ground Cinnamon
- ½ tsp - Ground Nutmeg
- 14 gms / ½oz - Artificial Sweetener
- 1 - Egg, beaten
- 1 tsp - Caster Sugar
- Preheat the oven to 180°C/350°F/Gas Mark 4.
- Put the Weetabix and Apricots in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
- Stir in the flour, spices, sweetener and beaten egg.
- Spoon the mixture into a 454g/1lb lined loaf tin and sprinkle over the sugar, so that a crust forms during baking.
- bake in the preheated oven for 1 hour, 15 minutes, until cooked.
- Cool on a wire rack before serving, then cut into 12 slices.
