Creamy and; warming winter lunch or starter, a great way to use celeriac, for those who've never tried it before
- 1 - Large Onion, chopped
- 1 - Garlic clove, crushed
- 1 - Celeriac, peel and chopped
- 2 - Coxes Apples, cored and grated
- 1 Litre - Vegetable Stock
- 1 small handful - Fresh Parsley, chopped
- Fry Light
- Salt & Pepper
- Heat a large pan, spray with Fry Light and add the onions and the garlic.
- Cook for 5 minutes until starting to soften.
- Add the celeriac and apple and cook for another 3-4 minutes.
- Add the stock and bring to the boil.
- Simmer for 15-20 minutes until the vegetables are tender.
- Season well.
- Liquidise the soup and stir in the parsley.
