Apple & Celeriac Soup

Creamy and; warming winter lunch or starter, a great way to use celeriac, for those who've never tried it before

Ingredients

  • 1 - Large Onion, chopped
  • 1 - Garlic clove, crushed
  • 1 - Celeriac, peel and chopped
  • 2 - Coxes Apples, cored and grated
  • 1 Litre - Vegetable Stock
  • 1 small handful - Fresh Parsley, chopped
  • Fry Light
  • Salt & Pepper

Method

  1. Heat a large pan, spray with Fry Light and add the onions and the garlic.
  2. Cook for 5 minutes until starting to soften.
  3. Add the celeriac and apple and cook for another 3-4 minutes.
  4. Add the stock and bring to the boil.
  5. Simmer for 15-20 minutes until the vegetables are tender.
  6. Season well.
  7. Liquidise the soup and stir in the parsley.
