Traditional Spagbol, with some extra veggies. A great healthy choice.
- 500 gms - Extra Lean Minced Beef
- 1 - Onion, finely chopped
- 1 - Celery Stick, finely chopped
- 1 - Carrot, diced
- 1 - Courgettes, finely diced
- 1 - Beef Oxo Cubes
- 25 gms - Mushrooms, sliced
- 1 x 400 gms - can of chopped Tomatoes/passata
- 1 tbsp - Tomato Puree
- 2 - Garlic cloves, crushed
- Splash - Worchestershire Sauce
- Fry Light
- 1 tsp - Dried Mixed Herbs
- Dried Spagetti
- 28 gms - Low fat Cheddar
- Spray the pan with FryLight, Add onions and cook until soft.
- Add crushed garlic, and a splash of water, if required to stop it burning. Crumble minced beef into the pan and allow to brown, stir occasionally.
- Add mixed herbs, salt and pepper and crumble in the Oxo Cube, simmer for 2 minutes, stirring.
- Add Mushrooms, courgette, celery and carrot, You can also add any other finely diced vegetables at this point. Add Tin tomatoes/passata, and stir through.
- Add tomato puree and a splash of Worchestershire sauce.
- Turn the heat to low and allow to simmer for 30 minutes.
- In another large pan, bring water to the boil and add enough spagetti to suit and boil as per the packet instructions.
- Drain Spagetti, and serve with a spoonful of the sauce on top and a light sprinkling of cheese (add the syns or use as your HEA.
